The Monkey and a Bunch of Tuesday Evening Randomness

 

Good evening.

How’s it going?

I had four choices just now- take a nap, start packing, do some more baking or write a blog post.

Obviously I narrowed it down to baking or blogging right away and since I baked away yesterday, I chose to write. You’re welcome?

I’ve got plenty of time to rest and pack. Ha ha.

 

I had the realization last night that my next that I signed up for the Carlsbad Marathon that is 11 weeks away. That sounds darn soon, doesn’t it? Since my training plan for the MCM marathon was 16 weeks long, I figured I should probably get some sort of plan or goal in the works in the next few weeks.

I was missing my man Bart, so thought I’d throw a couple Yasso 800s in the mix today.

Oh hey, looks like he was missing me a bit too.

I did a total of 8 miles- 2 warm-up miles, 4 Yassos, a random mile and then picked up that pace to about a 7:00 minute mile for the last 2.5 miles.

I attempted to get 8 miles done in 60 minutes. Didn’t quite make it.

Oh well. Had some good entertainment with Live With Kelly and Michael though.

Confession- that same towel has been on my treadmill for quite some time. I just keep reusing it. That’s pretty gross.

 

Taught a BOSU class a little later on at the gym.

Favorite move from today was the “monkey”.

We’re out of a few things around here. Yep, still out of kabocha. Day two with it not in the house. I’m fine. Really.

We’re also out of Starbucks espresso (not fine, it was a bit of a rough morning), paper towels and milk yet again. Oopsies.

 

Random things we are NOT out of:

– tons of purple sweet potatoes and plantains (I plan on making a ginormous no grain plantain cupcake or two to take on the trip.)

– all kinds of chili peppers

That’s right, we’re getting five a day over here lately. Pretty freaking awesome. No, that is not my hand, but to be honest mine are not that much better looking.

Random snack of the day today with coconut butter:

Super quick protein fix with microwaved egg whites, coconut butter and Trader Joe’s turkey bacon. I ate it just like that, like a little egg taco. It would have been better with the addition of a little avocado in there, but we’re out of those too.

 

Random throw together dinner I made for the boys a couple nights ago and plan on recreating tonight:

Whole wheat pasta with our favorite marinara sauce, those “green balls” from Trader Joe’s, roasted cauliflower and ground turkey meat cooked with Italian seasoning.

 

Random things I need to share before I go:

The whole dentist buying back candy thing is just awesome. We got in on it early, but our dentist does it as part of Operation Gratitude and sent it along with other things to the troops.

    I think that I need to make that monkey one of my daily moves soon – I’m sure that it is going to be much harder than you make it look in that video!!!

    I bought a jar of that coconut butter recently! Besides eating it straight from the jar by spoonful (yep.) or adding it to hot oatmeal, I’m not quite sure what to do with it!

    I actually do a veggie/fruit wash with vinegar and baking soda – found it on line somewhere and it’s much more economical and always on hand. After a 10 min soak and a rinse the produce is good to go!

    I have to make one of those giant plantain muffins – you keep posting them and they look so good!

    I saw purple sweet potatoes at Central Market here in Houston and immediately thought of YOU! Funny how those things happen. Cannot believe you are on day 2 of no squash. I’m having a craving and making a 1/2 tonight. Savory squash. Cannot believe your next race is 11 weeks away…EEEKKK you are a animal! XO
