Happy Thursday!

I got the chance to get outside for a jog this morning after dropping the boys off for school. A little over 6 miles in the sunshine. Not a shabby way to start the day.

(The time is not correct- I still haven’t changed it since the time change. Ha ha.)


I was thinking along the way on the run that it’s not easy to get out the door a lot of the time. You can call it an “easy” run, but the whole process of getting out there and actually motivating yourself to do it isn’t that easy most of the time. But….. that feeling once you’ve done it (whether it’s 1 mile or 10) is the best!



Okay, so let’s talk oats, oops, I mean N’Oats for a bit.

This is what I just put down after my run.

A new unsweetened mocha and some pumpkin pie n’oats.

Something about fall weather makes me want to light spice smelling candles, wear oversized pajama pants, sleep a lot and eat warm cereal. I am proud to say I’ve been doing all of them.

Since the whole STUFT Detox and while I’m doing a modified version of the Grain Brain Challenge, I’ve been trying to stay away from gluten and grains as much as possible. It’s hard during racing season though and I’ve had to make a few modifications along the way.


I found this recipe for paleo n’oatmeal through pinterest recently and decided I needed to try out a version of my own.

I wasn’t totally sure how it would turn out, but I’m happy to report that it has been a success on more than one occasion.

Here you go.



You can always enjoy them just plain with or without the sliced apple.


But it’s way more fun to top it with all kinds of goodies.



Mmm…….. fall N’Oats.

    My egg white carton says that one egg=3T whites, but do you prefer to use 8T whites for one egg?

      I usually use 1/3 cup per egg, but I also add more egg whites to things for more protein. This one worked well with more egg whites. 🙂

        I like egg whites, but I’m not sure my body digests them very well, they seem too cause gas, you eat a lot of them so I guess you don’t have this problem?

    I tried the “pumpkin” oats, I added some homemade dark rum vanilla, it was good, like pumpkin pie, I don’t think I’d like it without stevia though.
    p.s. Have you ever used Melinda’s hot sauce? Really good!

    Favorite oatmeal flavor is apple and blueberry. I love all fruits in my oatmeal!

    I love the watch. We have been known to leave a clock or two set to day lights savings time and just wait until it comes back. And it really isn’t on purpose.

    I did an oatmeal post today, too! This week I made a new kind: sweet potato oatmeal. Your addition of an egg is a great idea – protein!

    I am reading Grain Brain and this is the perfect recipe to replace my morning post-run oatmeal! Looks and sounds amazing and I’ll be trying it tomorrow … right after I pick up some pumpkin 🙂
