I got the chance to get outside for a jog this morning after dropping the boys off for school. A little over 6 miles in the sunshine. Not a shabby way to start the day.
(The time is not correct- I still haven’t changed it since the time change. Ha ha.)
I was thinking along the way on the run that it’s not easy to get out the door a lot of the time. You can call it an “easy” run, but the whole process of getting out there and actually motivating yourself to do it isn’t that easy most of the time. But….. that feeling once you’ve done it (whether it’s 1 mile or 10) is the best!
Okay, so let’s talk oats, oops, I mean N’Oats for a bit.
This is what I just put down after my run.
A new unsweetened mocha and some pumpkin pie n’oats.
Look at these beauties.
(Because you can’t have just one version of things, right?)
Something about fall weather makes me want to light spice smelling candles, wear oversized pajama pants, sleep a lot and eat warm cereal. I am proud to say I’ve been doing all of them.
Since the whole STUFT Detox and while I’m doing a modified version of the Grain Brain Challenge, I’ve been trying to stay away from gluten and grains as much as possible. It’s hard during racing season though and I’ve had to make a few modifications along the way.
I wasn’t totally sure how it would turn out, but I’m happy to report that it has been a success on more than one occasion.
Here you go.
Pumpkin Pie STUFT Paleo N’Oats
(21 Day Sugar Detox friendly of no sweeteners are added)
1 egg or 1/2 cup egg whites
1/2 cup pumpkin
1/2 cup unsweetened almond milk
2 tablespoons coconut flour (14 g)
1 tablespoon ground flax or almond flour (7 g)
1 tablespoon chia (7 g)
splash of vanilla or almond extract
cinnamon and pumpkin pie spice to taste
(Optional- add sweetener of choice- maple syrup, stevia, honey, etc.)
(Also optional- add a diced apple to the mix while cooking for an apple pie version like I did here.)
Put all ingredients on small saucepot on stove. whisk together to make sure everything is mixed well.
Cook over medium heat until egg cooks a bit and consistency is similar to oatmeal. This takes about 4-5 minutes.
Let sit for 1-2 minutes.
Top with your favorite toppings. Add nut butter, additional almond milk (or milk of choice), honey, nuts, etc. You pretty much can’t go wrong.
*Notes- This recipe is 21 Day Sugar Detox friendly if you don’t add any additional sweetener.
I liked it better with almond flour instead of the flax, but both work well.
Although I haven’t tried it, you can sub in mashed banana for the pumpkin for a sweeter version.
You can also prepare and store covered in the fridge for a bit. This is delicious cold as well.
You can always enjoy them just plain with or without the sliced apple.
But it’s way more fun to top it with all kinds of goodies.
Mmm…….. fall N’Oats.
