Friday Chat and Comfort Food- Sweet Potato Sausage Bake

 

Hi Friends! Happy Friday!

I feel like I have a whole bunch of random things to fill you in on this afternoon, so let’s just pretend we’re having happy hour together and I’ll do just that, yes?

First off, I started this morning with a strong cinnamon coconut café Americano. Actually, this is the new way I’ve been drinking my morning coffee lately:

brewed Starbucks espresso

hot water

cinnamon

coconut oil

I thought I was cool and started using this handheld frother to whip in the coconut oil and cinnamon. I like that it gets all bubbly at the top and well, everything is better when it’s whipped up, right?

 

 

Workout this morning- 10 easy treadmill miles at 8:20 pace.

I got off to a bit of a rocky start.

Yep, totally threw my jacket off and got is stuck in the treadmill. The treadmill cam to a dead stop immediately. Thank goodness I was standing on the side and not running. Could you imagine? My jacket was stuck under the belt and I had to pretend I wasn’t an employee and ask for some assistance. With a couple of us pushing the belt the opposite direction the jacket came out and all was good. I’ll do anything to procrastinate my run I guess. Ha.

Be careful. Don’t put anything too close to the treadmill belt. That could of actually been a pretty dangerous situation.

 

Afterwards the boys and I braved the rain

and made a stop at our favorite playground.

I was hungry and luckily I had a chia shot stuffed in my bag (goodness knows how long it had been there).

The playground “spider web” is always the biggest hit.

And, since I have talked food in a while on here I thought I’d show you my comfort snack from yesterday.

A cinnamon and cocoa roasted plantain with cinnamon roasted spaghetti squash topped with coconut butter and almond butter. It was fabulous.

I also tried a little comfort food dinner for the family the other night.

I found this Butternut Squash Crack recipe from someone’s post on Instagram recently and thought I’d give it a whirl.

In true Kristin fashion I didn’t really have any of the same ingredients. Nice.

But, what I threw together came out alright so I’ll give it to you.

STUFT Sweet Potato Sausage Bake

4 medium sweet potatoes (or more)

a package of sweet Italian sausages (I like the chicken ones from Trader Joe’s)

olive oil

seasonings- garlic salt (grinder from Trader Joe’s), Everyday Seasoning (Trader Joe’s), and Penzeys Herbs de Provence

goat cheese

 

Peel and cut sweet potatoes. Mix with olive oil (I didn’t measure) and seasonings of choice.

Place in baking dish and top with goat cheese.

Bake covered at 400 for about 40 minutes (or 375 convection- that’s what I did).

Uncover and bake for 10 more minutes.

 

Pretty darn tasty.

 

The original recipe calls for sage and salt and pepper as the seasoning, but I used these because I didn’t have sage, I add garlic to everything and I figured I couldn’t go wrong with Penzeys. Ha.

I’ll have to follow the real recipe next time, but I was pretty proud I didn’t ruin this concoction.

    Thats an awesome “easy” pace! I wish that was my easy pace ;). Whoops on the jacket getting stuck. I’m always fearful I’m going to do something like that (because I always have a pile of my stuff next to the treadmill). Have a great weekend!

    Oh wow! I’m glad you weren’t injured or anything with the treadmill coming to a sudden stop! That could be dangerous! Glad your jacket made it out OK too! 🙂

    Is it sad/bad that when I saw your jacket stuck the first thing I thought was : “Oh, no she tore her jacket!!” Oops…I suppose I should have thought….”Hopefully you didn’t get hurt” 😉 Well, glad you weren’t ….but, then again my hubby fell off one at the Y a few years back and we still DIE LAUGHING over it much to his expense!!! (And yes, the scares are still present on his knees from the tread tearing the skin right off…ouch!)

    A friend at work had her treadmill fail about 2 months ago. The power failed and it abruptly stopped while she was running full throttle. (Is that how you spell throttle? looks funny). Anyhow, she fell. Somehow hit the crest of her hip bone on something hard and really messed her hip up. Tore ligaments and cracked pelvis and femer. She is only 45 and is good health. The ortho doctor recommended conservative treatment with therapy and rest, but now after 2 months she is not better and is going to undergo surgery next week. She will be out of work for at least 2 Months maybe longer. We are both RNs.
    Her treadmill is an older model, I don’t know but do newer models have a safety feature that slows them so they don’t abruptly stop?

    Once my phone (listening to music) slipped off and fell.. I thought it fell to the side so I had to make the man next to me get off the treadmill so i could search for my phone. It wasn’t under there.. I must’ve looked so lost because one of the gym staff asked if I was okay- after explaining the situation she told me to put the treadmill on incline so I could look under it better. Still no luck, after putting all the 12 treadmills in that row on incline I still coudln’t see it. Clueless, i proceeded to do the same to all the treadmills in the row behind (peak hour at the gym, making everyone get off just for me to check= very unhappy trainers). Eventually found it- huge embarrassment.

    maybe a stupid question…but what is the yellow/whitish thing in the recipe? yellow squash? white potato? or some different kind of sweet potato? (i know you like the purple ones ;-))

    Oh wow, that bake sounds amazing. I have been having sweet potatoes with ghee and it’s heavenly. But I heart sausage. Good one!

    I have flung off a treadmill. But, I also wipe out running more than most. I hit rocks or take a wrong step and am in flight more than I’d like….with toddler scars at age 42!

      Oh Mari- I have a question for you. Why do the purple potatoes I bought at the Asian market have light flesh instead of purple? I don’t think they’re as good.

    You got Japanese sweet potatoes LOL. I like those better than reg sweet potato but not the same as purple ones for sure!

    You want Okinawian sweet potatoes. Everyone calls them different things. You know what they are when U see them because they have strange texture on outside. Like an old man. They can be all sorts of knotty too. Before I became a professional potatoer, I would scratch the skin to see. yep, I would. I can send U a tutorial just like the Kabochas if this keeps happening:)

    I love my favorite comfort food so much, I turned it into a specialty food biz! And it’s based on sweet potatoes, because I’m so in love with recipes just like you have here. This morning, for the 9-year-old sleepover, I made sweet potato and yellow finn potato hash browns, yum! We’re out of eggs, or I would have added one to the top of each pattie… alas… But even so, it was great comfort food to start a Sunday with.

    I wonder if you’ll be interested to know of my food, cuz it’s delicious, super-nutritious, has no fat and no sweetener, boasts only 250 calories in the whole 12 oz jar, and of course is loaded with nutrition. Let me know if you are interested!
