Tuesday Ten and Three Great Ideas Including Healthy Apple Pie Crumble

 

Good morning!

I stayed up a little past my bedtime last night doing some last minute Cyber shopping at both Reebok and Quest Nutrition. The special Reebok sale has been extended until today so that’s pretty cool. The custom shoe design card giveaway is open until Wednesday too! Don’t forget to enter!

 

I kept up with my early morning run plan this morning. Didn’t really pick up the pace like I had planned. It was more just like trying to keep myself on the treadmill to get it done. I can’t tell you how many times I looked at the mileage.

I got it done (I did step off the treadmill to get a drink of water quite a few times- oopsies) and then moved on with the morning. I’m really digging the whole get it done first thing in the morning deal.

 

So let’s see.

Two great ideas for this Tuesday morning.

 

First the boys’ brilliant idea.

Yesterday they weren’t too excited about our gourmet green pancakes leftovers for breakfast. They came up with the idea to use some Chobani Champions tubes as as little “frosting” to doctor them up.

And might I say, they have some decorating skill.

My great ideas lately. I only have two.

First one.

When there are nights that call for fast Trader Joe dinner fixes, I try to make myself feel better about warming frozen pizzas up in the microwave by serving them with roasted veggies for the boys.

It helps balance it out a little bit, yes? The boys have been digging roasted cauliflower lately by the way.

 

My best idea was last night.

I had a bit of hearty snack yesterday afternoon.

Roasted plantains, a baked chocolate chip Quest Bar, almond butter and unsweetened dark chocolate sauce with some chocolate Arctic Zero from all the samples I was sent.

I’ve tried a couple of the different Arctic Zero flavors. I’ve been pretty impressed so far by the taste and texture. Don’t get me wrong, it’s definitely not regular ice cream or anything, but it’s fun to eat something creamy right out of the pint container.

I’m not sure though my tummy agrees with all the dairy though. Bummer, but that’s okay. You work with what you’ve got right?

 

So anyway, last night I wanted a little something warm for dessert, but wanted it to be sweetener and dairy free since my tummy was still feeling the effects of the afternoon snackage.

I made my recipe for healthy cake batter cookie dough crumble, but without the sugar substitute or sugar and baked it along with a sliced apple sprinkled with apple pie spice on parchment paper.

I baked it for 15 minutes at 375.

Scooped it in a little cute bowl.

Added a little unsweetened vanilla almond milk and viola.

A clean, sweetener free, healthy apple pie crumble. Perfect for a little cold weather late night snack.

And now, it’s time to try to find our darn Elf on a Shelf. I have no idea which box he is in and we all need his help right about now.

Totally random, but on average I get up 2-3 times during the night to take the boys to the bathroom or whatever. How many times (if any) do you wake up throughout the night? When do we get to sleep through the night again? 15 more years? Ha ha.

    Both desserts look yummy!! I need a MAJOR sugar detox and the cookie crumble sounds perfect!!
    I have two little guys and NEVER get a full decent nights sleep…. Maybe once they go to college ;)

    How funny that I have been making my own version of individual apple crumbles too? Lol. I was going to post about it tomorrow…My son doesn’t wake me up like he did when he was little but when he does walk in to tell me something,I pretty much just shout go back to sleep. I guess he does because the next thing I know I am getting up in the morning barely remembering he came in at all. I have no patience for the night time thing that I wonder how I made it through those early years with me since he was a nursing baby who never slept and didn’t sleep through the night completely in his own room until after the age of 4!

    I LOVE warming up an apple and adding cinnamon and granola to it! I’ve had it the past 3 nights or so… :) I will have to try your cookie dough crumble! Unfortunately, I get up at least once or twice every night to use the restroom…soo annoying!

    On a good night we are only up 1-2 times. On a bad night I lose count. There are nights that my fitbit says I am restless 45+ times a night. It really makes me cherish the nights that I get 5+ straight hours of sleep. I can’t wait to try this. When I was in grade school I would always buy and extra apple crisp.

    I had the most delicious desert tonight. I melted some coconut butter, and then added some unsweetened dark coco powder to it and then drizzled it over some strawberries. It was seriously perfection in a bowl. Squashed my sweet tooth and made my stomach feel very satisfied and not icky like it does after eating something with sugar or artificial sweeteners. I have found that since I did the Whole30 my stomach is a lot more sensitive to too much dairy/sugar.

    YUMMMMMMMMMMMMMMMMMM! OK, those boys are so cute!!!! As for waking up – I am older so – well, sleep can be elusive at times due to the crazy bod! ;)
