A Shoulder Move, Some Fine Produce and a NuttZo GIVEAWAY

Well hello!

Another day flew by, Christmas cards still sit. Shocker.

We did venture to Costco today. Lunch of samples? Okay.

We also finally hung a few ornaments on our tree (instead of just socks) and I forgot to show you our fabulous gingerbread house we made over the weekend.

Cute, right?

We’re pretty proud.

I got up for an early morning 10 mile treadmill run this morning.

photo 1

Yep, slept in my Handful and socks yet again to be ready to go.

photo 2

A little bright today.

Breakfast was fun afterwards.

I’ve been out of purple sweet potatoes, so resorted to a couple Japanese sweet potatoes I’ve had on hand for awhile. They’re good, but not as good as the purple ones. My egg scramble was with chicken apple sausage, spinach and kale.

Random, but I asked Joaquin if he wanted eggs and bacon for his breakfast like yesterday. He said, “no, only when I’m wearing my bacon and eggs shirt”. Funny guy.

Taught a short BOSU class a little later on at the gym.

Last week, I attempted to make a video for you of my favorite move from class, but it didn’t turn out too well. I’m going to share it anyway.

Shoulder push-ups. They are fabulous with or without a BOSU.

Basically you’re in an upside down V position with your tush in the air and your head tucked under and lower your head to have the top of it touch the floor. Definitely harder than it looks. A little move I learned from my man Bob Harper here.

I got a fabulous package from Frieda’s this afternoon that included jicama, blood oranges, Meyer lemons, polenta, fresh ginger and purple sweet potatoes.

Obviously I was most excited about these beauties.

Interesting that the label says to bake them for 1.5- 2 hours. I don’t do it that long at all, but my perfect baked purple sweet potato seems to work well.

I might need some ideas with what to do with this fresh ginger. Is there a secret to grating it?

And, not from Frieda’s, but from the hubs, check these out.

I have no idea what kind of squash this is.

And this huge butternut squash should last awhile.

Now that’s pretty darn big.

You know what else the hubs brought home?

Funny. I’ve had caramel apples on the brain since the this race.

The boys and I shared that bad boy after dinner.

And whelp, since this post has a ton food pictures already, I may as well give something delicious away, right?

I have one more batch of cookies to bake tomorrow. I’m making NuttZo Doughtzel Balls.

If I had to choose a favorite flavor NuttZo, it would be chocolate (even though I go through the Peanut Free NuttZo like crazy).

They have a new creamy version of chocolate NuttZo out.

We use it in our STUFT NuttZo Monkey Balls.

Yep, chocolate, creamy goodness.

For you of course.

I don’t know what kind of squash that is, but I can tell you about my bad squash habit. I love eating squash. Just not a fan of cooking it. Cooking for 1 is such a chore! So I tend to buy squash, and let them sit. I have a few acorn squashes I bought about a month (or so….?) ago that I have yet to cook! Does squash go bad? Do they last for a long long time? I have no idea what kind of squash that is but I do know my favorite trick for fresh ginger: After the first time I use it (peel the end and microplane it into whatever) I keep it in the freezer. When it’s frozen the skin comes off super easy and it’s just firm enough to grate easier.

  129. 129
    MelissaC says:

    Elizabeth says:

When you do your early morning treadmill runs, do you eat anything before? I was just thinking 10 miles is a long way to go on an empty stomach. I use a microplane grater for ginger and put it in my warm lemon water in the mornings.

Ive never had Nutzo before, but I have tried to make it myself. I have no idea if it tastes like the real thing though.

    Merry Christmas!!

I would love to try some Nutzo! The trick to grating ginger is to peal it, freeze it, and than grate it with a microplane. You can keep the rest in the freezer. Freezing ginger gets rid of all the stringiness that happens when you grate it unfrozen…

No idea, but I can say that I am absolutely loving roasted butternut squash these days. I made some the other day with olive oil, brown sugar, cinnamon and a dash (or two or three) of cayenne pepper and eat it on brown rice with mixed veggies. AMAZING!!! And I have to say that YOUR creativity has helped me to branch out in my own meals!! So thank you for that!
