Some Good Timing, Easiest Pasta Dinner Ever and Some Links

Happy hump day friends!

I have a new idea for a personal rule. No computer after around 6 or so. Then I can focus on dinner, family and getting to bed at a decent hour. I did it last night for the first time in awhile and it was glorious. I sleep so much better when I’m not on the computer right before bed. Aren’t there a lot of studies out there on that? I think they’re right.

I was in bed at 9:00 and it looked a little something like this.

That there is also my running journal for 2014.

I’m keeping track of my running, training and races this year. Hmmm….. I should also keep track of the mileage I put on a pair of shoes. I’m really not good about that and I need to be.

Didn’t get too far into the Runner’s World issue, but super excited about all the articles.

I should have some time this afternoon to look it over while the boys are at swimming lessons. Yep, that’s right, swimming lessons on January. I do feel guilty about our nice weather.

Getting to bed early last night made it that much easier to only press the snooze button once this morning.

I got on the treadmill early for 10 miles while watching a little of this movie.

2014-01-07 08.11.07

No cool routes or anything today. I started at 8:00/mile pace, but picked it up a bit the last couple of miles.

2014-01-08 06.52.47

I finally got the early morning timing right and just as I finished my run my little man came in.

2014-01-08 06.53.20

He was a bit, shall we say, whiny, but I was done and ready for him. I wish every morning was like that.

Taught a spin class this morning too. I swear. music makes a spin class. I really need some new tunes for my playlist too by the way. I’ll take any suggestions.

Decided to not sport the slippers today, but instead these slip on shoes.

2014-01-08 09.32.24

I guess they kind of look like slippers though too, huh?

Random, but I stocked up on just a couple kabocha and Frieda’s purple sweet potatoes the other night. Love it when they’re on sale.

2014-01-06 19.10.23

They’ve gone down like this in roasted kabocha boat form.

I also discovered recently that a baked purple sweet potato with a little sea salt and guacamole is magnificent.

IMG_2169

It went well with a little roasted turkey salad.

Also random, I’ve been loving this Good Earth tea combination lately.

On bag of each, hot or cold. Perfection.

We’re out of a lot of grocery type stuff at the moment. I see a major Trader Joe’s trip in our very near future.

Last night when we hit that time right before everyone hits a wall, I realized I needed to do something quick and easy for dinner for everyone.

I always say I’m going to plan a week’s worth of paleo type dinners for the family, but I haven’t made the time. One of these weeks I’ll get it together. Right?

Anyway, this was the easiest throw together seafood pasta ever.

IMG_2195

I used to make it all the time before kids and before all my dairy issues, etc.

Seafood blend from Trader Joe’s, Classico Sun-Dried Tomato Alfredo sauce and whole wheat penne.

Cook up the seafood with a little olive oil, garlic and Italian seasoning.

IMG_2205

Add the sauce.

IMG_2206

Put it on top of the cooked noodles.

Viola.

IMG_2207

It also goes well if you do the whole broccoli slaw and pasta trick, but we were out of that too so it was paired with a big salad.

Okay, I better get a move on. Lots to do. Too bad showering at the moment isn’t one of them. Thank goodness for Action Wipes. Seriously.

Leaving you with this little reading from the other day. Could not have hit home more.

And a few links for the day:

A really great article by my inspiring Runner’s World Challenge friend, editor Jen Van Allen on some basics for beginners on treadmill running and walking.

Running and Walking on the Treadmill

Another inspiring post by her here on giving yourself credit for your accomplishments and perspective as a running mama trying to fit it all in.

On A High Note

After my whole treadmill incline issue, this one makes me think I might have to calibrate the treadmill speed too? I better get out the manual again. Do I need to do this?

Quest Bar giveaway is still open too.

Have a good one!

Do you have a go to easy dinner that you throw together really quick when you need to?

Have you ever had guacamole on a sweet potato?

I need some spin song suggestions again. If you have any, please leave them for me. My classes will thank you.

Dinner looks so good! I don’t have a convenient Trader Joe’s near me, so I’ll make special “field trips” there after work every so often, looks like I need one to find that seafood!
My favorite quick dinner is just a chicken or shrimp wrap with black beans…it’s just me, though, so quick can also be just popcorn some evenings. :)
I’ve only ever taken 1 spin class, so I’m no help on the song front, sorry!

Do you belong on Spotify? You can follow me ( Marcia Parker Grajewski ) and peek at my Spin playlists. I instruct at least twice a week. :-) Right now I am loving: Love Me Again (John Newman) Pistol of Fire -Mark Ronson Remix ( Kings of Leon) and Chasing Twisters ( delta rae) just to name a few! I LOVE making playlists for my rides. I agree, the music makes or breaks an awesome spin class!!

I just want to know how you run that dang long on a treadmill?! I could run outside all day (okay, big exaggeration, but you get the drift haha), but I just can’t make it on the treadmill. Tips? Suggestions? Anything? It’s cold…I need indoor tips asap haha. Blessings! I love Jesus Calling by the way :)

That dinner looks so good! I’ve never bought frozen seafood at trader joes before, I’m always afraid it will be rubbery, but yours looks pretty good. I will have to try that out!

I love dinners like that one – perfect for those nights when it’s 30 minutes to prep (and maybe eat) or nothing!!!
Glad you got in your miles before the boys got up!! I finished 9 right at the time that I needed to make sure my boys were up (funny how it changes from them getting up early to me having to get them up!!).

Love when something hits home just when I need it :) That pasta dish sounds like a great one for busy week nights.

Great job on the workouts! We’re out of everything too, I’m headed to the food store tomorrow afternoon. Have you heard the song best day of my life? That’d be a great spin song!

Never put guac on sweet potato, but I would totally try it!

The link below is for jog.fm–I use it for my running playlist, but there is a cycling option too! You can browse through other people’s playlists to find a few songs you like.

Yum that dinner looks delicious! I made a quick and easy quinoa recipe tonight that turned out delicious and was a bit hit with the husband! Glad you figured out your morning work out routine :)

I think I finally found someone who appreciates sweet potatoes like me! That pasta looks delicious by the way!

My fav go to dinner is nachos! For me, I always have brown rice or quinoa cooked up so I put black beans, cheese, avo, tomatoes, etc. Basically whatever I have that would taste good on top. For my kids, ages 4 and 6 I ask them if they want nachos like I am having or tortilla nachos. Tortilla nachos means they skip the quinoa or rice and have everything put on top of tortilla chips. They love it and I feel like we are still eating a somewhat healthy dinner. win/win
Guac on a sweet potato sounds awesome!

You are lucky if you can manage no PC after 6:00 PM. For me night time is the only time I can be on my home computer, however I have recently decided no computer between 4:30 PM and 8:00 PM (that’s the time my kids go to sleep), no even for a second to check something ‘really important’. I really felt computer time was getting in the way of being with my kids time.

I am working on a spin playlist to post tomorrow so check the blog then! I have also noticed lately that songs totally make the class. I hate to say it but some of my favorite instructors who provide a solid workout unfortunately have just not had good music lately, they plan a great workout and then the music actually detracts from it!

It’s a great idea to plan to focus on your family. Kids grow up so fast!

I just updated my playlist last night for my half marathon on Saturday and some of my new additions were: Roar (of course! by Katy Perry); Miss Jackson (Panic! at the Disco); My Songs Know…(Fall Out Boy); The One That Got Away (The Civil Wars); Demons (Imagine Dragons). A couple perennial favorites, and ones you most likely won’t find on other playlists, are: Sing, Sing, Sing by The Benny Goodman Orchestra and In the Mood by Glenn Miller…those songs NEVER fail me when I need a boost!

I think I’ve thrown just about everything on a sweet potato. You can honestly never go wrong with those bad boys! I love when I make a big pot of something in the slow cooker and then have it throughout the week for easy go to dinners. Makes my evenings so much easier. PS: I love disconnecting early too. It makes such a big difference! :)
