Bag Winner, Baking, Cowboy Bark and Monday Motivation

 

Well hello Monday. Oh how you like to sneak up so quickly.

Speaking of, Joaquin had a flashing reflector of mine last night and I told him specifically not to take it in the bathroom or close to the tub so it didn’t get wet because it would ruin it. Obviously he took it in the tub and then couldn’t figure out why it didn’t work anymore. I asked him why he took it in the tub after I told him not to. His response, “I was trying to be sneaky.”

Well, at least he’s honest (most of the time).

 

Oh and not sure how things go down at your house, but if I don’t set my alarm and I really want to sleep in, well, it doesn’t happen and I usually get woken up a little like this.

I took things easy yesterday and did a little time on the elliptical. Definitely brought back memories of all the time I logged on there when I couldn’t run through my injury.

Today started off with 6 miles on the treadmill while watching Parenthood. It was a really sad episode by the way.

Anyhoo…

Besides a little race action, we did some baking and a lot of eating over the weekend too.

I saved that second Cookies and Cream flavored Quest Bar for after the race Saturday and did the whole baked Quest Bar topped with NuttZo thing.

We took a family trip to Trader Joe’s Saturday night after church. Somehow this Cowboy Bark got into our cart.

Somehow after a glass of wine later that night,

that delicious bark found it’s way onto a rather large date night dessert. Funny how that happens.

Both Kitty and the wine can share the blame for that one.

This gluten free STUFT green banana bread is becoming a weekend staple over here.

I didn’t have any Greek yogurt so I just subbed in about 1/3 cup of low fat milk and it still came out just perfectly. I think it’s the coconut oil. Coconut oil makes everything delicious.

On a whim yesterday I also roasted some colorful carrots.

Yep, roasted carrots cinnamon style. They were marvelous with a little SunButter.

I also randomly made took a turkey burger and did it up STUFT egg-rito style instead of a bun.

That worked out pretty well too.

 

Okay, I’ve gotta run to teach some classes, but I’ll leave you with a little Monday motivation.

 

This awesome chica, Emily Q. ran her first ever marathon wit a goal of just not walking and rocked it with a 9:44 pace to finish around 4:15:28. Go Emily!

So cool, right? Heck yes I know what giving up feels like, I’ve done it a billion times with different things, but if it’s something I really want I keep trying darn it because I want to see what can happen if I don’t.

    No baking this weekend – last weekend I made Nutella stuffed chocolate chip muffins though!

    If I don’t set an alarm my wake up is usually a dog snout to the face. It’s pretty startling.

    I am not going to give up on my classroom portfolio this week. It’s a giant binder of evidence that shows my classroom follows through with all the necessary standards for the daycare center I work at. It’s crazy overwhelming and easy to walk away from.

    Though this is completely not healthy baking I made some mint chocolate chip cookies – pretty tasty!

    If i Don’t set my alarm usually my cat is in my face at about 6:00 am. I keep pushing her off and she gets right back up. I guess she is hungry or something….

I just bought it to help expand my menu. You have so many great ideas too. I should never run out of new things to eat!

        It looks really good. It’s a NY Times bestseller too. I’ve looked at so many cook books and this one has a lot of great recipes. I’m going to start cooking from it tonight, and baking some sqaush.

    That picture of the boys waking you up is hilarious!! I love that they have on pajamas but one of them also has on boots!
    No baking for me – I spent the weekend driving to TX, watching my sis-in-law run her first marathon and driving home – crammed a week into 2 days but it was so very worth it!! And, now I think I need to sign up for my very first official marathon!!

    I’m doing a LOT of baking! I’m baking over 1000 cookies for my former high school’s “Walk for Life” cancer support walk tomorrow – doing it as a “Thank you” for all the kids who donated and are walking 5K in support of finding a cure for cancer. I have 500 done, just another 500 to go! (Wish I didn’t have to work so I could go home and bake today!) My Mom worked at the high school and she passed away from cancer last year….it’s the very least I could do to support the school and all the love and support they have given my family. <3
    I love love LOVE that quote! Let's see….I won't give up on finding time to workout this week! Getting started is always the toughest!

    OMG, the kids & the cat – LOVE!!!!!!

    Course I am not giving up my weekend treat cookies for sure! :)

    Our neighborhood is so noisy that is the alarm does not get my first, barking dogs or rude neighbors wake me up. ;)

    I bet I know which Parenthood episode that was…was it Kristina’s message to her kids that Adam watched in the hospital? I watched that on the treadmill a couple of weeks ago and had a slightly embarrassing emotional breakdown. :-)
