A Movie Quote and Gluten and Dairy Free Pumpkin Muffins

 

Why hello.

Set my alarm for 5:00 am this morning. Pressed snooze twice, maybe three times. It’s kind of a blur. Still managed to get on the treadmill for some miles before anyone woke up. It was glorious.

Seven miles. Wave Sayonara shoes today. Three miles to warm-up, then 3 at 7:00/pace and one more cool down mile since everyone was still sleeping.

Loved that I was done before the sun was officially up.

Also loved that I had a brand new bag of blueberry flavored coffee to open.

It was pretty good. Weird, but good. Ever since the whole Dunkin Donuts coffee thing, I’m intrigued by fruit flavored coffee.

Taught a spin class once I dropped off the boys at school and then had the chance to finish my run and this cute movie once I got home.

It made me think I need to remember to focus more on helping others in life. You know- make a difference, reach out and inspire people, help those who need it, share joy, stop being selfish, etc. Working on it.

I made sure I got in some good antioxidants today.

I roasted up another special sweet potato from Frieda’s and added a few blueberries in the mix along with some sweetener free roasted kabocha. Just delightful.

 

Okay, so there’s a new muffin that happened over here.

One of the things the boys really wanted to do yesterday morning was make our special gluten free green banana bread.

Unfortunately we didn’t have any ripe bananas, but I did happen to find quite a few cans of pumpkin in the pantry so we decided to experiment.

I have to admit that is usually not the case. I also have to admit that most family friendly recipes have to get STUFT Daddy’s approval before they are blog worthy.

These got his approval and we’ve been going through them pretty quickly in the past 36 hours.

We got a little talk yesterday from the doctor about proper nutrition and how everyone should be eating vegetables at every meal, even breakfast. So next time we’ll make sure to make these green, but for now, here’s the recipe.

    I wish I could run and watch movies/TV at the same time, but my mind is not focused enough when I run. I can only do music.
    Those muffins look really good and I love anything pumpkin.

    Do you think I could use rice milk instead of almond? I’m allergic to almonds and bananas so this recipe looks great if I can sub out the almond milk…

    Those muffins do look delicious! I really can’t pick a favorite kind of muffin, top three would have to be blueberry, pumpkin, and banana. For some reason, my mind is blank and the only movie quotes I can think of come from Elf.

    I made these muffins a few weeks ago, and batch number two is next on my list of things to do. Coming out of the oven I was so disappointed, these seemed to be the definition of hockey puck, and radioactive orange to boot. Was I ever surprised when I actually tried them a few days later! These muffins are my all time favourite! They are so soft and moist, and melt in your mouth delicious! I’ve never had pumpkin before, but that pumpkin pie spice is AMAZING! Thank you for sharing, oh, and my favourite muffin is blueberry 🙂
