Easy Like Monday Morning

 

Isn’t there a song like that or something? “Easy Like Sunday Morning” maybe?

Let’s see- running first.

Yesterday it was pretty easy to get motivated to do a two part run after hearing the news that my inspirational friend, Deena Kastor, (we hung out and all at the ASICS LA Marathon two weeks ago),  not only won the Rock ‘n’ Roll Dallas Half Marathon, but also set two Master’s records at the age of 41. So my early morning 6 mile run was later followed by a 10 mile run while watching a cute flick.

I picked up the pace a bit on both runs- the first one in the middle and the second one the last five miles. I did n’t really keep track of my actual pace, but just played with the speed a little bit.

 

Today, however, I just wasn’t feeling it this morning so I did 6 easy treadmill miles. It would’ve been easy to talk myself out of it, but the Boston Marathon is in 4 weeks. Um yeah. Can’t really wrap my head around that one.

I also got a new show on Netflix. The New Girl. It’s pretty cute.

So easy talk.

Gosh darn it, if life was easy and finding the balance each day was easy, what would we do with ourselves right?

I’m working on simplifying the things that I can.

 

The easiest salad dressing ever I’ve been making lately.

I’m actually just now realizing I have posted something like this before and called it Hot and Sweet Salad Salad Dressing.

I don’t measure, just combine the Trader Joe’s Hot and Sweet Mustard, apple cider vinegar, Trader Joe’s Everyday Seasoning and some of those Ghost Chilies. Good stuff.

Best eaten with a turkey or chicken salad, with a little crushed red pepper and outside while watching the kiddos.

Also best followed by sweetener free roasted kabocha squash. Ha.

Another really easy thing from yesterday was subbing in some Silk Almond Coconut Blend milk in our gluten free green banana bread to make it dairy free also. Oh, and to make muffins instead of bread.

I pretty much followed the recipe for dairy and gluten free pumpkin muffins, but added the spinach and bananas like the green bread.

They came out marvelously. Especially the ones with added chocolate chips. He he.

 

Speaking of greens and spinach, it’s really easy to add an entire bag of spinach to a turkey bacon egg white scramble.

And the hot sauce I add to it every morning is an easy decision also. Yep, this Scotty B’s sweet bacon jalapeño is simply the best.

It is also a very easy decision right now to wrap up my computer time and help these guys who seem to have lost their lizard they caught just now.

    Ohhhhh there are some days where running just takes A LOT to get through! New Girl is a great show. The salad dressing sounds yummy. I will have to try that combo. Hope the rest of your day goes great!

    That flower is gorgeous!! I have always liked roses – especially some of the uniquely colored ones!!!
    I’m bummed because I only made it through 4 miles this morning – something weird with my right calf. Not good since I only have 6 weeks until I take on another 50 mile race!! Oh, well – it will just go away!!

    I can’t believe how soon the Boston Marathon is!! So close – I am not running but my husband is and I look forward to cheering him on. My favorite flour would have to be the tulip – They are so simple yet so beautiful. That and Sunflowers because my grandmother used to grow them and they remind me of her.

    Love new girl! Running sometimes is just a mental battle! My favorite flower is a tulip currently just because it would be the first sign of spring and I am tired of the snow!

    I think my favorite flower is a peony, but them junks are expensive, as I’m finding out as I go through and plan my wedding!

    As I mentioned on IG – I live for that hot & sweet mustard! It used to be a seasonal item here & I would stock up before it went out of stock. :) So glad that it is a regular item for now – we all know ho TJs likes to make stuff disappear! ;) That salad looks amazing!!!!!
