Green Grain Free Plantain Breakfast Cake


Good morning!

And… it’s Tuesday.

My goal was to be done with taxes today so I was ready for a little meeting this afternoon with our guy.

Not going to happen.

My other goal was to get up early and get a run in first thing.

At least I got that one done. Had to talk myself into it a bit though.

9 easy paced miles. Incline at 1.0 and pace between 8:20-8:00. 3 New Girl episodes. Lots of sweat. Wave Sayonara shoes. Fun Asics shorts. One bloody toe.



Taught a couple classes last night. Made sure to end them all with some planks for the FitFluential April Abs Challenge.

Which reminds me, there’s a downloadable calendar here to follow for the rest of the month if you’re interested. The goal is to hold a plank for 3 minutes by the end of the month. Tough stuff.


I’m also back on the meatza pizza train. So darn easy when you use turkey burgers from Costco.

Okay, well, I teased about this delicious breakfast cake almost two weeks ago, so it’s about time I give you the recipe. It’s been made a few times since and has been devoured each time.


First off, a little throw back Tuesday action with my very first “green” post about green baked goods. Pretty funny to look back on it and see the boys and the recipes I was coming up with.

I haven’t made those original green microwave muffins for so long. I need to because they are darn good. I guess it’s time to revisit that recipe. I’ll get to that. After taxes of course.

And yes, for those of you not fans of green baked goods, this can be made without the kale or spinach.

    Great pic! Costco just started selling plantains and I need to try them out!! Looks like an awesome and filling breakfast… I’ve been going back and forth with green smoothies and homemade paleo banana bread topped of course with nuttzo! I scored big on that $5 sale!!!

    I’m laughing at your green muffin explosion…That used to happen a lot, but now it seems like it is more under control. 😉 This breakfast cake looks delicious, but anything with a plantain is delicious. Oh and always topped with NuttZo!
