Good morning!

Happy Friday!


Taught a couple classes at the gym last night. One was a full body strength training class. I’m feeling it today. I have to say, I really like the feeling of being a little sore from the previous day. It makes you feel like you did something, yes? I also have to say that I think everyone should be doing some sort of strength or resistance training at least 1-2 times a week. It can be simple with weights at home or a resistance band. I swear it makes a huge difference.


Gave up my morning run time to sleep in with the family a little today. Also gave up my early bedtime last night to finally finish taxes. It’s been so fun being locked in the office pretty much all week. Ha. I “think” they’re finished. We’ll see after my meeting today.

If all goes well, now I’m just almost four months behind for this year. Awesome. Yes, I’m an overachiever.


Let’s see. Dinner the other night was fabulous. I decided to call it healthy chicken spaghetti “squashos”. I know, the name is awesome. The picture however, is not.

I just took roasted spaghetti squash and topped it with seasoned shredded chicken, romaine lettuce, jalapeños, salsa, spicy carrots (I found a huge container of them at Costco-score) and homemade date night guacamole. I also had some roasted asparagus on the side. I’ve been eating asparagus pretty much every night lately. Not sure why, it’s just fun.


So you’ve probably noticed I’ve been eating more grains. Just something I’m trying out a bit.It’s always a process figuring out what works, right?

Since I’m out of kabocha, there’s a new snack I’m pretty much obsessed with.

It’s popcorn.

I’m not the only one who’s excited about this new snack. It’s a hit all around.


Not sure it’s good for my teeth, but I currently love having a huge bowl of air popped popcorn in the afternoon with some iced tea.


Oh look, I ever tried to work a little bit outside.

That went over about as well as my yoga session. Ha.

It’s not easy to eat popcorn and type by the way.


I’ve been topping it all different ways:

Apple cider vinegar and Tapatio with salsa seasoning and salt.

Sriracha and butter with sea salt and Bagel Spice.

Coconut oil and cinnamon.

Yesterday it was Cholula with balsamic vinegar and garlic salt, cayenne and nutritional yeast.



Not sure if all popcorn kernels are the same or not. I’m going to look into that. I just bought the cheap stuff from Smart and Final. Does anyone know?

    I think there are different colors of corn for popping, white, yellow, red, black, etc., but it would always be a good idea to try and buy non gmo, organic corn if you can.

    Best popcorn topping: unsweeted dark chocolate chips. Pour them in the bowl as soon as the corn is popped and they will melt a little bit. SOOOOOOO delicious.

    your spicy popcorn looks amazing. i also love m&ms in popcorn..dump a few in when its nice and warm…yumm…what a sweet and salty treat!

    This is probably a stupid question, but how do you actually make air-popped popcorn? Do you not need any oil for it? Thanks!

      LOL. Not stupid at all as I had to call my mom to ask how to use an air popper. I bought the air popper for like $20. No oil or anything. Just pour the kernels in and turn it on. Sooooo awesome!

    Popcorn is my favorite snack!!! I am quite addicted to it 🙂 I have never been as adventerous as you though with my toppings, may have to try some of them!

    Glad you mentioned the grains topic, because I have actually been meaning to ask you your thoughts on grains. I’m a fairly new reader, so perhaps you’ve already done a post on this, not sure 🙂

      I haven’t done any updated posts lately on it actually. I was grain free for awhile. I can send you some links as to what I did, etc. or maybe I should just do an update post. Ha.

    if you melt and mix coconut oil with cocoa powder or nuttzo or pb2 (or anything for that matter–coconut oil is amazing!) and drizzle it on and then let it harden (or pop it in the fridge for a few min if you’re inpatient like me) it’s absolutely delicious!! I also love topping it with cereal or dipping the pieces into stuff too!

    I love when I can actually get my self sore from a workout, which I totally did this week! It does make you feel more accomplished even if it is not necessarily true!

    Do you strength train your legs? Looking at your race pics from treadmill run la and rw your form needs work. Your pelvis drops and you knee adducts due to glute med weakness. Given your history of injuries I’d be working on that

    Popcorn is actually produced from a different crop than the regular old corn government-subsidized almost 100% likely to be GMO corn that we’re always hearing about. So, there’s way less of an issue with buying organic popping corn (if you like to stay non GMO/organic). This is coming from a chemist in the agricultural field (sorry, people).

    I just got some of that nutritional yeast so now to figure out how to use it! Popcorn is always good! Although my tummy is not too sure. 😉 The boys & the faces they make!!!! 🙂

    I am OBSESSED with popcorn!!!! I like Orville Redenbacher kernals. Right now I”m using popsecret and theyre not the best. I just put butter and salt on it…I guess I could get more creative but I just love it that way. YUM YUM YUM.

    I try to do some resistance training twice a week. It may or may not happen…

    Do you find the pro compression socks to be a big in size? I ordered extra small. My foot is a size 6.5. You’re feet look smaller than mine and I notice I have more room in my sneakers when I wear those socks. I’m in Brooks Pure Flo.

    I’m not sure how you feel about GMOs but conventional kernels are loaded with them. So if that bothers you, trader joes has a really great priced tub of organic corn kernels. Also, I like to cook my popcorn with coconut oil and then top with a few shakes of spirulina and nutritional yeast. Mega yum and good for you!
