Random Life Happenings From the Phone

 

Happy Friday evening friends!

I finally feel like I’m getting back into the swing of things at home. It always takes me a little extra time after traveling and races.

I’ve ran three times total this week. Shorter, slower runs on the treadmill. Nothing too exciting.

I’ve been teaching my normal classes at the gym also. Speaking of, I had some pretty cool escorts last night.

Supposedly STUFT Daddy had a “work” event or something called “Cinco de Rhino”. We didn’t ask questions.

He missed out on this though.

I won’t be chatty this evening. I’m still a little drained from the 2014 Big Sur Marathon recap post, as I’m sure you are also from reading that lengthy thing.

So, I have just a few fun pictures and randomness from my phone over the last few days.

The other day I finally opened this vegetable spiralizer. I had wanted one of these for over a year and  bought it on Amazon (link is here) for my birthday in January. It was still in the box until two days ago.

STUFT Daddy came home with some zucchini for me though from the garden, so I had to finally get that puppy out. It was super easy to put together, use and even to clean. Not to mention it made some good looking zoodles.

I’m sure there is a lot to be done with them, but I was lazy and just threw them on a pan and roasted them with a bunch of other veggies (just like roasted broccoli slaw).

Then I topped them with marinara, chicken, crushed red pepper, nutritional yeast, Cholula, balsamic vinegar, fresh basil and who knows what else.

The month of May snuck up on me (as does every single months these days). I had kind of an “ah-ha” mommy moment though.

Since the big races and trips are over for the time being, I’m working on prioritizing a bit differently this month.

Things I’m focusing on are getting up earlier to get in my runs while everyone is still sleeping, slowing down a bit (pretty much with everything), being in the moment more and taking advantage of every minute I get with these guys.

I had a few helpers coming up with that list when we had our little morning chat over breakfast.

Oh, and random, but the other day after I picked up the boys from school Judah starting pulling out feminine products from his school backpack and asking, “Mommy, what are these?” Yep, mother of the year right here. Disclaimer- I gave him my old gym bag to use when the zipper on his backpack broke and he had only used it for a couple days. I guess things could have been worse. Ha.

And, I don’t know quite what it is, but somehow this guy always seems to have an “emergency” right when we pull into the driveway and just can’t wait until I unlock the front door.

I mean, really, it must just be a guy thing. We better work on that though.

 

I’ve been eating pretty much the same thing for breakfast every day.

An egg white scramble with chicken sausage and spinach cooked in coconut oil and topped with Scotty B’s sweet habanero sauce. And either a peanut free Nuttzo or SunButter and cinnamon sandwich along with a Flatout Bread coconut butter and cinnamon one also.

Someone asked me recently what my favorite chicken sausage is and right now I’m loving this Trader Joe’s Smoked, Apple Chardonnay chicken sausage, especially for breakfasts.

I revisited my spaghetti squash paleo mac and cheese last night.

I put in a can of albacore tuna in there this time and some mushrooms and asparagus. It did not disappoint.

 

After my run this morning I had a little trouble on the home front. These guys meant serious business after they overheard that going to the beach might be a possibility for the day.

I’ve never seen them get dressed so fast before and they were not going to put the guns down until they knew for sure we were going.

They also insisted on opening a brand new box of Love Grown Foods Power O’s for breakfast.

I had a lot of work I “should” have done today, but after reading my devotional this morning knew that I could put it off for another day or two. It was more important to have a family day.

So that’s what we did.

And may I just say it was a huge success. We had a Chargers football player celebrity sighting (Eric Weddle).

Looks like he doesn’t get much ab work in. Ha ha. Kidding.

We also had the coolest kite at the beach

and even got it to fly for at least 5 minutes.

On the way home we hit up Leucadia Pizzeria. I had the grilled shrimp salad (same thing I had the last time)

One last thing before I call it a night.

There is no randomness in life (unlike this blog post).

Don’t let moments slip through your fingers only kind of being in them. Don’t let worry get in the way of the present.

The present is what matters most.

Yes? Yes.

    Love the pics! Jealous of your beautiful cali weather! Zucchini noodles are my favorite and it’s not even warm enough here in Chicago to plant Zucchinis. Send me some!

    I love making zucchini noodles too! I am not cool enough to have a spiralizer, but I do have a nifty Pampered Chef gratter thingamagig. I like to make zucchini noodles and carrot noodles and toss them with thin spaghetti noodles with sauce for dinner. My daughters, ages 5 and 7, are always pretty impressed so it is worth the extra effort.
    I am a vegetarian, so I do not eat breakfast sausage. But I did make a garbonzo bean apple cake that made me think of you this week. I made the cake as research per se on my quest to invent some delicious, homemade granola bars that will be good running fuel for me and good snack fuel for hubs and the kids.

    I have had a spiralizer for a while! zoodles are the best!! Try sweet potato! MMMM actually one of my favs!

    I really do need to get a spiralizer. I keep putting it off because I don’t want another gadget but I love ordering zucchini marinara in restaurants and would love to spiralize sweet potatoes and asparagus and everything else I read about!

    Yes, I have the same spiralizer and love it! I think you’d enjoy spiralizing beets and jicama to roast or just eat raw on a huge salad!

    How in the world did you recognize that guy? His abs are amazing but his face/beard/ …Duck Dynasty wanna be? I don’t think I would recognize any celebrity in person unless they came up to me and introduced themselves. ;-)

    Although, I would recognize you…and you are the closest thing to a celebrity I know…I mean you hang with Bart, Deanna, and Bob Harper right?! ;-)

    Since eating Paleo for two years I’ve had my spiralizer and love it ……you love sweet potato and jicama my favorite two things to spiralize ……so delicious sautéed in coconut oil and coconut aminos ……

    Totally agree about spiralizing sweet potato. I sautée in coconut or olive oil and have with meatballs.

    My San Marcos native hubs (we are in MN now) is just a LITTLE jealous that you ran into Eric Weddle on the beach. There just aren’t too many Charger fans around here. As for the embarrassing items in a bag…sadly, I’ve sent many-a-tampon flying across a counter as I whip my wallet out of my purse at the cash register. You’d think I’d learn…

    Dang – that guys abs are pretty awesome!!
    I’ve spent this entire year working on living in the moment – one of the biggest things I do is try to completely focus when I’m talking with my boys (anyone for that matter!) – no phones, computers…..

    I think peeing like ..wherever..is definitely a guy think. I will always remember my son (who is 32 now), when we were swimming at a friends house when he was 3 or so. I looked over and saw him peeing into the bushes next to the pool! So embarrassing. Though I guess I should have been proud that he followed the “no peeing in the pool” rule :-)
