Dance Fail, Dessert, a Morning Smoothie and a Winner

 

We were super excited to go try out the boys’ first dance class at the gym yesterday afternoon. I mean, we all know they have some great booty dance moves and all.

It went down a little something like this.

Yep. They wanted no part of it. Joaquin informed me he already knew all the dance moves and wanted more kids to be there.

I didn’t force it. I guess every new thing is a learning process. After someone threw a temper tantrum in the hallway of the gym because he wanted to dance once everyone was gone, naturally we left and did the next best thing.

I happen to find this purple asparagus.

I’m pretty excited about it. Not as excited as I would be if they had purple sweet potatoes, but any purple produce is a score in my book.

 

Last night I did the whole pajama eating dessert in bed thing again.

I made a version of creamy dreamy ice cream with real maple syrup and one packet of Stevia as the sweetener. Then I added some strawberries and a white chocolate raspberry Quest Bar.

I reread this from Jesus Calling about three more times last night.

Such a great reminder. We know we shouldn’t worry and that we’re not supposed to, but it’s just so hard not to, right? I think I need to read this every single night.

 

I got up early to get on the treadmill this morning and finish another Orange is the New Black episode.

I totally see how people binge watch that show. It just sucks you in. Ha.

 

Since were headed out shortly for the events of the morning, I whipped up a quick smoothie. I used some of my favorite fun new ingredients.

I’ve mentioned that I take CocoaVia capsules everyday, but I also like these dark chocolate unsweetened packets that have the same cocoa flavanols and benefits.

You can add them to pretty much anything and then sweeten as desired.

Here’s the smoothie from this morning.

organic kale (as much as I could fit in the Nutribullet)

1 1/2 cups unsweetened almond milk

1 packet unsweetened dark chocolate CocoaVia

1 tablespoon gelatin (I used this one)

1/2 packet Vega Sport vanilla protein powder

splash almond extract

frozen coffee cubes

I blended it up in the Nutribullet and now we’re on our way.

    My favorite smoothie is just a vanilla based protein powder mixed with almond milk and frozen strawbs. Throw frozen bananers in there and it’s even better! I find I love the fruity protein smoothies more so in the warmer temps and chocolate/pb ones in the fall or winter. Favorite dessert is really weird but so amazing: jello mixed with melted peanut butter<3

    Your ice cream snack looks so good!
    I’ve been making a rich chocolate smoothie with coffee, almond milk, ice, frozen banana, rice protein, cocoa and little stevia. Have you tried blue diamond almond breeze reduced sugar original(40cal)? I like it so much better than silk.

    I really need to remember to make coffee ice cubes for my smoothies!!! My favorite dessert is always ice cream…but lately ( this week) it’s the delicious loaf of blueberry lemon cream cheese bread I made from my fresh picked blueberries. So.good.

        Filling:
        1 8oz package of cream cheese
        1 egg
        1 tbsp truvia
        1 tbsp flour
        2-3 tbsp Lemon curd
        ( blend the first four together and then swirl in the lemon curd. Set aside)

        Bread:
        1/2c butter
        3/4c sugar ( I personally used 1/4 sugar and then 2 tbsp truvia)
        1/4 tsp salt
        1 tsp vanilla extract
        2 eggs
        1 1/2c pastry flour ( I used whole wheat)
        2 tsp baking powder
        1/3 c milk
        2 cups fresh blueberries
        1 tbsp flour (to coat berries)

        Cream butter and sugar together (3-4 minutes) and then add salt and vanilla. Add eggs one at a time, blending well after each egg. In a separate bowl, whisk flour and baking powder. Add half of the dry mixture to the butter-sugar mix, then the milk, and then the rest of the dry mix. Toss the blueberries in the tbsp of flour and then fold it into the mix. (The batter will be thick)

        Spread half the batter into a prepared pan, then spread cream cheese on top, and then top with the rest of the batter. Bake at 350 for 45-50 minutes.
        Halfway through the baking time, I sprinkled a little brown sugar on top for fun :)

    No favorite dessert but, I enjoy spinach and coffee with my smoothies when I make them. Kids think I am crazy but hey? that’s OK!

    My Y has started some new dance classes, garden classes, tumbling, and ballet ~ because they are new they have about 4-5 kids in them….pretty funny to see there cautious faces when shaking their hips or doing a pile! I can totally relate to the boys reluctancy. ;-)

    I wish the cocoavia peeps would take that carrageenan stuff out though – not good – supposed to cause cancer. I don’t think the capsules have it but the powders do….

    OK, COOKIES for me!!! :)

    Right now my go to smoothie recipe is really simple (it’s just a side to go with my oatmeal!). One scoop of the vegasport vanilla protein (my fav) and a frozen fruit mix of strawberries, peaches, and pineapple. So good!!!!

    Too funny, at the Trader Joe’s here the kids have to find a sea turtle. Wonder if it is a different animal at other stores too.
