The Big STUFT Silk Protein Sugar Cookie

I thought my Mondays were crazy before. Really, I had no idea what crazy was. This new schedule has put things in a whole new perspective.

I got in an easy run on the treadmill this morning and finished off the long day at the gym teaching a couple classes.

It’s pretty safe to say that there were quite a few people who were jealous of my towel.

That’s right friends, don’t toss those old baby towels. They may come in handy someday.


I got an email today about a Mizuno sale happening right now that I have to pass along.

I’ve been doing some night working lately after the boys are in bed. It’s not really the best idea with the early wake ups as of late, but obviously I’m still figuring things out.

I’ve found though that a ginormous mug of hot cocoa helps this situation a bit while sitting in my office.


Why yes, I am aware that is the coolest sock monkey ever. He’s new, was on sale and came with friends. More on that later though.

We’ve got more important things to talk about at the moment like how you can froth Silk almondmilk.


Speaking of, I have yet to track down the new cashew milk or the Holiday Nog.


I have a little over a week to find it because you better believe I’m showing up for Christmas Eve with a carton if this in hand.


I just may have to also come with a couple of these magnificent STUFT Silk Protein Sugar Cookies.


Heck yes you just read that right.

I’ve decided I’m not doing my normal holiday cookie baking madness this year. However, I did just create this delightful protein cookie that I’m quite proud of.


I’m so proud, in fact, that I feel like I not only must pass it along, but also must make this for the man in the red suit when he pays us a visit.

I mean, he’s going to have enough unhealthy goodies to consume he may as well get a healthy, no grain protein sugar cookie to change things up a bit.


I made this cookie on a whim, but there are going to be quite a few more in the very near future. I love it when experiments work out.

This is a huge, single serving soft protein sugar cookie that will knock your socks off (or boots if you’re you know who).

Here you go friends.

Here are the exact ingredients I used.


(Trader Joe’s coconut flour and Quest Nutrition Vanilla Milkshake protein powder are both amazing.)

Here’s a before and after picture since you know, I have nothing else better to do with my time. (Now that’s just funny, isn’t it?)


Seriously, this giant no grain protein sugar cookie is darn healthy and THAT good.

    OMG – I am all over this!!!!! I have not tried that nog BUT I have tried the Califia Farms one that is amazing & since I still have some I will try this with that & look for the silk one… COOKIES!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! OMG, you made my day!!!

    We figure most people leave cookies for Santa, so we leave carrots for the reindeer. They gobble them up!

    I’m making that cookie tomorrow. Prob can’t nuke it huh. If u try more pls post.
    Does silk almond froth? I used to use pacific but it’s not frothing anymore. Changes to whole foods brand since many others don’t either! I’ve had coconut and cashew milk, only cashew in a mix tho and its a no frother:( I need froth to smile

    Yep, they microwave! Yum! I used Growing naturals vanilla. I topped with Barney’s chia almond butter but I am SURE there are many other toppings to be tried. Thanks!
