The Last Step and Taco Bite Tuesday


Happy New Year’s Eve Eve.

Hmm… I’m feeling a little pressure to get my life in order before New Year’s Eve tomorrow. More so than in years past which is weird. But, the time is ticking and I’m determined that this year will be different. I Need to have things in order rather than just having a bunch of notebooks ready, but no real goals written down or anything.

I’m on it.

I taught my classes last night at the Y. It was my last step aerobics class as a new KettleWorx class that I’m teaching instead starts next week.

It was a little bittersweet. I’m super excited to start teaching KettleWorx, but step will always have a little piece of my heart.

I did something I haven’t done since I was pregnant last night too. I stepped inside the weight room. I usually don’t use machines and just do free weights and bands in my classes for my resistance training, but I figured it was the start of my new year and time to change things up.

I have just a few choice machines I do, but I always start with walking lunges down the hallway.

Last night I did 100 total and then hit up a couple machines (lat pull, chest press, leg extension, shoulder press, chest fly and row) for 15 minutes or so.

After all the men were asleep I sat with my ginormous bowl of paleo mac and cheese topped with broccoli along with a little Parenthood.

I had some furry, wait, actually, not so furry, friends join me too.

Ha ha.

Then I tried to get a head start on some more 2015 goals.

This morning I had a short recovery run on the schedule. So I did a few easy pace miles on the treadmill. And yes, I watched the first part of The Family Stone again even though I just watched it the other day. I have to finish off the year the right way.

Random, but I always pay attention to what’s in refrigerators. I totally noticed that they had the Silk holiday nog in there. Ha. Can you spot it? I never found that stuff around here this year and am kind of bummed actually.

Here are a couple of Tuesday favorites from the day before we get to the taco bites.

This new Vega One powder is just darn delicious.

I can’t wait to try all the flavors. I love that there are a lot more greens and more protein in the new mix. I sipped it up with some egg whites today.

We’re going through a bit of a celebration detox over here. It may last a bit longer than planned for all of us.

Oh man. It was a rough one.

Oh, the whole sock thing is new though and not my idea at all. I think he got it from my Pro Compression sock obsession. Funny stuff.


Okay, so, moving on.

It’s Tuesday. I know a lot of people do the whole “Taco Tuesday” thing. I’ve never really been in on it, but I did make these little cute taco pie bites the other day for the boys that I was darn proud of so I thought I should pass them along.

I was making our favorite taco pie for the hubs and I and the boys don’t really like it (yet).


I know, that’s just ridiculous, isn’t it? Anyhoo, we got to eat the whole thing just the two of us (his and hers sides)


and I got to make little cute bites for the boys. It ended up being a win win.


Here are the instructions for the bites.

Take a refrigerated pie dough (just like the one for taco pie). Cut in into four triangular pieces.

Top each piece with turkey or beef that has been cooked with taco seasoning.

Add Mexican style shredded cheese.

Optional toppings- olives, hot sauce, a little salsa, jalapeños, etc.


Fold up and press edges together.


Bake on a foil lined cookie sheet sprayed with nonstick spray at 375 for 25-30 minutes.


Mmmm hmm.

Cute little taco pie bites.


Impress the kiddos or impress some friends for an easy appetizer.

Next time I need to make an adult friendly version with some hot sauce and such.


Okay, off for another little short run for the day and to do some post Christmas cleaning, toy purging, laundry, etc. All the fun stuff.

    You are ahead of me with the notebooks and books! I have a training log en route, but that’s about it!

    New years involves beer and a bonfire of Christmas trees that my boyfriend collected from around the neighborhood. We’re classy like that. 😉

    Those are some impressive taco bites….probably have to try that one.

    Hubby and I bought a stationery bike for Christmas so after I work a bit at MY Y…2-6:30…I will be coming home to put it together so we can start this New Year off right. 😉

    And ~ the “not so furry” friend that found you is so cute ~ I am hooked!! (But hard to compete with the cuteness of your boys clothing selections and thrilled faces!!)
