Healthy Peanut Butter Cookie Dough Dip

This healthy version of a peanut butter cookie dough dip will please everyone! :)
  • 1 can garbanzo beans, drained and rinsed (250 grams)
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 4 tablespoons PB2 (or other nut butter)
  • 2 tablespoons brown sugar
  • 1/4 cup granulated sugar (or Splenda granulated)
  • 1 tablespoon ground flax
  • 1/4 cup nondairy milk (almond, soy, etc.)
  1. Put all ingredients together in food processor.
  2. Blend until smooth.
  3. Cover and chill if not serving immediately.

If you use regular nut butter in place of the PB2 make sure to decrease the amount of nondairy milk. Start with 1-2 tablespoons and add additional tablespoons as needed until you get the desired consistency.
Add in chocolate chips, butterscotch chips, white chocolate chips, or shaved chocolate for an extra special treat.
Can be served with graham crackers, animal crackers, homemade cinnamon crisps, pretzels, or whatever your heart desires! :)
